Mango Avocado Salad or Dip

MangoavosaladMake this now; thank me later. Seriously, this is to die for. I could eat it every day. I adapted this recipe from my coworker’s “Cowboy Caviar Chip Dip” and I’m forever thankful to her for bringing it into my life! The adaptations were: I used mango and/or strawberries instead of corn and/or black eyed peas, reduced the amount of oil and added lime juice. This is a slap-your-grandma damn good salad. Or if you dice the ingredients smaller it makes for a dip that’s the best thing that’s happened since studies claimed red wine in moderation is good for you. I’ve made this recipe five┬átimes in two weeks, I simply can’t get enough and I bet you won’t be able to either!
