IMG_2742 Four. That’s how many times I’ve made this soup in the last month. My husband and I had a family house warming party on the Saturday after Christmas and my mom recommended we make this soup. Since she was coming up for the party I had blessing of making it together. Everyone loved it! Then I made it again the following weekend for guests, and two more times since then when we had company over for dinner. It’s the perfect home-run homemade meal because it’s both simple and incredibly full of robust flavor! pumpkinbarsmuffinsAnother pumpkin recipe! Sick of ’em yet? :) I aspired to make some raw vegan pumpkin bars, for which the pumpkin filling part of it was PERFECT! But unfortunately the base that I made for a crust was way too overpowered by the taste of molasses (who knew that just two tablespoons of molasses can totally overpower a recipe?!) It was way too strong to eat, so since I no longer had a base for my pumpkin filling I decided to switch gears. To the raw vegan pumpkin filling I added 2 flax “eggs”, applesauce, gluten free flour, coconut & safflower oils, salt, and baking powder. Now I had a perfect batter for a homemade vegan pumpkin mini muffin recipe or also a homemade vegan pumpkin bars recipe.

Spicy Vegetarian Thai Green Curry Recipe

curry We make green curry fairly regularly for dinner because it’s healthy & simple. Just chop up a bunch of veggies and saute ’em with the curry mix, serve it over some rice and voila! Recently I made a some green curry that was so spicy my husband was sweating profusely from the heat it had. It was also an experiment that turned out amazingly delicious — I used mostly almond milk instead of coconut milk just because that’s what I had on hand — and my husband couldn’t even tell. Fourth of July Flag Cake

flagcakeI may have mentioned before, but I bake once a week for my office. It had been a while since I baked something on the extravagant side, and when I saw this flag cake on pinterest I was up for the challenge because Independence Day was that upcoming weekend! It’s actually not that difficult to make; it just takes a lot of time and care reading the directions so your cake turns out properly. It’s a great cake to bring to a party because of the element of surprise when cutting the first slice! My coworker randomly decided to videotape me cutting the cake which obviously worked out nicely because people’s reactions are now documented. Video at bottom of post!

Grilled Amazing Veggie Tofu Sandwich

veggieburgersammyMake this sandwich and you won’t be disappointed. If you don’t like tofu, then just use meat. I’m vegetarian, so my version is sans meat ;) This could easily be a vegan or gluten free sandwich as well! In this photo it’s actually not tofu pictured, it’s a veggie patty. But the next night I made the same thing with tofu and my husband and I both like the tofu version better.

S’more Cookies

smorecoookieNo campfire? No problem. Enjoy s’mores year round with this SMORE COOKIES recipe! Baked on top of graham crackers, these marshmallow-filled cookies are then topped with pieces of hershey’s chocolate bars. I love the crunch of the graham cracker combined with the soft gooey pillowy marshmallow cookie. I also spread peanut butter on half of the graham crackers before adding the cookie dough which was a good move in my humble opinion. If I had nutella on hand I would have experimented with that as well. Now for the Smores graham cracker cookie recipe!
