Cauliflower Fried Rice

Cauliflower Fried Rice RecipeMy husband and I can both vouch that this Cauliflower Fried Rice Recipe is indeed actually very tasty! We were both a little skeptical of the concept of Cauliflower Fried Rice, but I was very intrigued to see what all the fuss was about. But alas, when I asked what he thought of the Cauliflower Fried Rice recipe his response (in between shoveling it into his mouth) was, “I love it!” I’m excited to make this Cauliflower Fried Rice recipe more often because it’s one of those versatile dishes where you can pretty much just use whatever ingredients sound good to you/or whatever you have on hand. I will recommend to not skip the green onions or coconut aminos (if you’re not Paleo/Whole30 just use soy sauce). Not familiar with Coconut Aminos? Neither was I! But I’ve found coconut aminos at Fred Meyer, Safeway, Whole Foods and other natural grocers. Just ask, I’m sure your local store has it too! Read on to learn how to make Cauliflower Fried Rice! Pumpkin Mini Muffins & Bars – all natural, gluten free, sugar free, vegan.

pumpkinbarsmuffinsAnother pumpkin recipe! Sick of ’em yet? :) I aspired to make some raw vegan pumpkin bars, for which the pumpkin filling part of it was PERFECT! But unfortunately the base that I made for a crust was way too overpowered by the taste of molasses (who knew that just two tablespoons of molasses can totally overpower a recipe?!) It was way too strong to eat, so since I no longer had a base for my pumpkin filling I decided to switch gears. To the raw vegan pumpkin filling I added 2 flax “eggs”, applesauce, gluten free flour, coconut & safflower oils, salt, and baking powder. Now I had a perfect batter for a homemade vegan pumpkin mini muffin recipe or also a homemade vegan pumpkin bars recipe.

Carrot Ginger Soup w/Multigrain Blend & Veggies

carrotgingersoupcookedI love shopping at Trader Joe’s, especially when their samples are right on the money because they’re generally SO incredibly easy to throw together. Last time I went to Trader Joe’s they were sampling their Carrot Ginger Soup combined with their Multigrain Blend with Vegetables. Sold. I just threw this together at home today and added two organic sweet potatoes to the mix; it was the perfect cup of soup on this beautiful fall day. The soup is gluten free and vegan (besides the honey) and the multigrain blend is vegan/vegetarian, but not gluten free. You could easily make a homemade version of this in the crock pot! My husbands satisfying quote after scarfing it down, “Mmmm. *Pause* That was really good.”

Pumpkin Cranberry Walnut Gluten Free Granola Bars

granolabarscutThat Sweet Cranberry Pecan granola recipe was sooo tasty I had to make it again. But this time I adjusted the ingredients to reflect that of the season…pumpkin with walnut! It’s very similar to my homemade gluten free Sweet Cranberry Pecan granola, clusters, or bars recipe, but I with just a few additions (pumpkin and more spices) and adjustments (1/2 cup more oats, walnuts instead of pecans, 1/4 cup more cranberries, 2 TBsp more oil).

Sweet Cranberry Pecan Granola, Clusters, or Bars

IMG_2105.JPG Last week I tried some granola that was simply amazing. The brand is Love Grown Foods, flavor was called Sweet Cranberry Pecan. It also happened to be gluten free, which is a plus for all those gluten free people out there. My mission? Recreate that goodness! I used my Maple Pecan Granola recipe for proportion’s sake and just substituted the ingredients for those found in Love Grown Foods Sweet Cranberry Pecan granola clusters. I did add some hemp hearts because I had them on hand and wanted to use them. I also used pumpkin seeds instead of sunflower seeds… just because :) The final result? My husband thought it was more of that amazing store bought granola! I will definitely be making this Sweet Cranberry Pecan granola clusters recipe often. It’s the best homemade granola recipe I’ve tried, IMHO.

Spicy Vegetarian Thai Green Curry Recipe

curry We make green curry fairly regularly for dinner because it’s healthy & simple. Just chop up a bunch of veggies and saute ’em with the curry mix, serve it over some rice and voila! Recently I made a some green curry that was so spicy my husband was sweating profusely from the heat it had. It was also an experiment that turned out amazingly delicious — I used mostly almond milk instead of coconut milk just because that’s what I had on hand — and my husband couldn’t even tell. If you like spicy food, you should try this spicy thai green curry recipe – vegetarian, vegan, and gluten-free friendly! Read more of this post

Fourth of July Flag Cake

flagcakeI may have mentioned before, but I bake once a week for my office. It had been a while since I baked something on the extravagant side, and when I saw this flag cake on pinterest I was up for the challenge because Independence Day was that upcoming weekend! It’s actually not that difficult to make; it just takes a lot of time and care reading the directions so your cake turns out properly. It’s a great cake to bring to a party because of the element of surprise when cutting the first slice! My coworker randomly decided to videotape me cutting the cake which obviously worked out nicely because people’s reactions are now documented. Video at bottom of post!

S’more Cookies

smorecoookieNo campfire? No problem. Enjoy s’mores year round with this SMORE COOKIES recipe! Baked on top of graham crackers, these marshmallow-filled cookies are then topped with pieces of hershey’s chocolate bars. I love the crunch of the graham cracker combined with the soft gooey pillowy marshmallow cookie. I also spread peanut butter on half of the graham crackers before adding the cookie dough which was a good move in my humble opinion. If I had nutella on hand I would have experimented with that as well. Now for the Smores graham cracker cookie recipe!

Peanut Butter Cheesecake Bars with Oreo Crust

PB Cheesecake BarsThese bars are hard to handle. Rich. Creamy. Decadent. Chocolatey. Peanut buttery. Oreoy goodness. These are like your classic magic bars on crack. Make them and see for yourself! The best part is that to make the oreo crust, you have get to remove the oreo cream filling from each cookie…and whether the filling ends up in your tummy or in the trash is between you and your kitchen.  Read more of this post
