Chewy Coconut Cookies – (GF, Dairy Free, Refined sugar free)

coconutcookiesAnd yes, they taste (so) GOOD!! :) I will never post a recipe that wasn’t well-received, unless it’s to do a recipe review of something I made. So before you assume that there is no way a gluten free dairy free refined sugar free cookie can taste good, let me tell you the reactions people at my office had when they tried this cookie. Many of my coworkers live gluten free or dairy free lifestyles and one co-worker happened to be on a “no-sugar-september” kick. I challenged myself to make something that was suitable for everyone, but I didn’t tell people these homemade cookies were gluten free, dairy free, refined sugar free cookies. I just told everyone they were Coconut Cookies and observed their reactions. Everyone loved them and most came back for seconds or thirds. When I told people they were gluten free dairy free refined sugar free cookies they proceeded to pick up their jaws off the ground. So there you have it! S’more Cookies

smorecoookieNo campfire? No problem. Enjoy s’mores year round with this SMORE COOKIES recipe! Baked on top of graham crackers, these marshmallow-filled cookies are then topped with pieces of hershey’s chocolate bars. I love the crunch of the graham cracker combined with the soft gooey pillowy marshmallow cookie. I also spread peanut butter on half of the graham crackers before adding the cookie dough which was a good move in my humble opinion. If I had nutella on hand I would have experimented with that as well. Now for the Smores graham cracker cookie recipe!

An Eclair Affair


If you know me, you probably know that my mom is famous for her decadent cheesecakes! I always thought it would be fun to have a signature dessert like my mom. However, I hadn’t made anything yet that seemed..right for the part. Until now. ECLAIRS! I made eclairs for the first time this week and oh man, they were yummmmmmMY! Then I thought, “Emma’s Eclairs” has a nice ring to it…maybe this will become my “signature dessert.” I’m very excited to share this first draft of the recipe, and I’m excited to make it often and play around with the ingredients. Maybe one day I will be known for my eclairs like my mom is known for her cheesecake :)

Peanut Butter Cheesecake Bars with Oreo Crust

Bread Pudding


This was my first time making bread pudding and it turned out wonderfully! I brought it to my office and everybody loved it. They were very surprised to find out that it was made with (mostly) almond milk. That being said, I can only imagine how sinful it would taste if you make it with whole milk or cream!

Seahawks Super Bowl Cake!

seahawkscake Living in Seattle has never been so much fun with the Hawks in SuperBowl XLVIII! So much excitement in the air with Super Bowl Sunday just two days away! I couldn’t help but want to make an awesome cake for Seahawks Super Bowl XLVIII. This Seahawks Super Bowl cake is made from scratch but I used store bought frosting & food coloring for the field & logo. Update: HAWKS WON!!! And the cake lived up to the event; it was “SUPER” tasty. I made it again for my husband’s birthday two days after the Super Bowl, but I used a football shaped cake pan (photo at bottom). Peanut Butter Oreo Cheesecake Bites

20130915-190536.jpg How did you discover the peanut butter Oreo combo?! I discovered it from watching the movie The Parent Trap. Ahh, remember the good ol’ days? You know, when Lindsey Lohan was cute and innocent? Let’s just say it’s probably a good thing that she doesn’t really have an identical twin. Anyway, I believe I have taken the beloved peanut butter Oreo combo to the next level with these Peanut Butter Oreo Cheesecake Bites! My mom used to have her own cheesecake business (about three decades ago) but everyone still raves about and requests her cheesecakes because they are that amazingly good. I used her base recipe but baked them in muffin pans and mini muffin tins. These Peanut Butter Oreo Cheesecake Bites were the most popular among a few other mini desserts I made for a party last night (Cheesecake Bites, Mini Almond Cupcakes, and Mini Red Velvet Cupcakes). Homemade Jules Destrooper Almond Thins

20130912-130309.jpg I was babysitting the other day and stumbled upon a yummy looking treat in the pantry: Jules Destrooper Almond Thins. I tried one and then another, and then I ate half the package. Oops! The packages are small, okay! Anyway, I knew found my next baking experiment and for two reasons. First, like anything, it’s more economical to make a homemade Almond Thins recipe than buy prepackaged. Secondly, I had to replenish the package of Jules Destrooper Almond Thins that I wiped out!
