Banana nIcecream

banana nIcecreamIf you haven’t tried Banana nIcecream by now take this as a sign from the universe that the time has come for you to partake in this tasty little treat. Skeptical? I was too. I thought “Seriously, you don’t just blend a frozen banana and it magically tastes different than just eating a banana.” Well, it does. So give it a try and prove your skepticism wrong! Pumpkin Mini Muffins & Bars – all natural, gluten free, sugar free, vegan.

pumpkinbarsmuffinsAnother pumpkin recipe! Sick of ’em yet? :) I aspired to make some raw vegan pumpkin bars, for which the pumpkin filling part of it was PERFECT! But unfortunately the base that I made for a crust was way too overpowered by the taste of molasses (who knew that just two tablespoons of molasses can totally overpower a recipe?!) It was way too strong to eat, so since I no longer had a base for my pumpkin filling I decided to switch gears. To the raw vegan pumpkin filling I added 2 flax “eggs”, applesauce, gluten free flour, coconut & safflower oils, salt, and baking powder. Now I had a perfect batter for a homemade vegan pumpkin mini muffin recipe or also a homemade vegan pumpkin bars recipe.

Pumpkin Cranberry Walnut Gluten Free Granola Bars

granolabarscutThat Sweet Cranberry Pecan granola recipe was sooo tasty I had to make it again. But this time I adjusted the ingredients to reflect that of the season…pumpkin with walnut! It’s very similar to my homemade gluten free Sweet Cranberry Pecan granola, clusters, or bars recipe, but I with just a few additions (pumpkin and more spices) and adjustments (1/2 cup more oats, walnuts instead of pecans, 1/4 cup more cranberries, 2 TBsp more oil).

Homemade Honey Pecan Butter

pecanbutterNothing fancy here! Just combine on full speed in a food processor: 2 cups raw pecans, 3 Tbsp honey, and 20 vanilla sweet drops (optional) until it turns into pecan butter! This homemade pecan butter is delicious on toast, pancakes, waffles, or as a dip for sliced apples. I also used it in my chewy coconut cookies recipe.

Chewy Coconut Cookies – (GF, Dairy Free, Refined sugar free)

coconutcookiesAnd yes, they taste (so) GOOD!! :) I will never post a recipe that wasn’t well-received, unless it’s to do a recipe review of something I made. So before you assume that there is no way a gluten free dairy free refined sugar free cookie can taste good, let me tell you the reactions people at my office had when they tried this cookie. Many of my coworkers live gluten free or dairy free lifestyles and one co-worker happened to be on a “no-sugar-september” kick. I challenged myself to make something that was suitable for everyone, but I didn’t tell people these homemade cookies were gluten free, dairy free, refined sugar free cookies. I just told everyone they were Coconut Cookies and observed their reactions. Everyone loved them and most came back for seconds or thirds. When I told people they were gluten free dairy free refined sugar free cookies they proceeded to pick up their jaws off the ground. So there you have it! Now see for yourself and give these chewy cookies a whirl! Read more of this post

Sweet Cranberry Pecan Granola, Clusters, or Bars

IMG_2105.JPG Last week I tried some granola that was simply amazing. The brand is Love Grown Foods, flavor was called Sweet Cranberry Pecan. It also happened to be gluten free, which is a plus for all those gluten free people out there. My mission? Recreate that goodness! I used my Maple Pecan Granola recipe for proportion’s sake and just substituted the ingredients for those found in Love Grown Foods Sweet Cranberry Pecan granola clusters. I did add some hemp hearts because I had them on hand and wanted to use them. I also used pumpkin seeds instead of sunflower seeds… just because :) The final result? My husband thought it was more of that amazing store bought granola! I will definitely be making this Sweet Cranberry Pecan granola clusters recipe often. It’s the best homemade granola recipe I’ve tried, IMHO.

My Big Skinny Greek Cheesecake!

20130803-230621.jpgI call this “My Big Skinny Greek Cheesecake” for 2 reasons: First, it’s “skinny” because it’s so healthy, you could eat it as a nutritional breakfast. For real. Second, it’s “Greek” because it uses Greek yogurt (not cream cheese) and … dun dun dun … feta! It’s all Greek to me! No butter, no sugar, no cream cheese. I know what you’re thinking… no WAY! Well let me tell you something…WHEY! Pun intended. This bad boy has vanilla whey protein powder to give it nutritional benefits and sweeten it up :) This is real people. Healthy Homemade Low-fat Yogurt

20130626-114542.jpg If you don’t buy organic yogurt (or organic anything), then I think ignorance is bliss when it comes to the ingredients. I checked the ingredients in a Yoplait strawberry light yogurt and found: cornstarch, added sugar, citric acid, aspartame, Red #40 (which is made from petroleum), etc. Sorry to spoil your bliss! But the good news is you can buy organic yogurt if you don’t like to eat petroleum. Or you can make your own organic yogurt with just two ingredients! It is oh so delicious with a sprinkle of cinnamon and topped with fruit or granola.
