Cauliflower Fried Rice RecipeMy husband and I can both vouch that this Cauliflower Fried Rice Recipe is indeed actually very tasty! We were both a little skeptical of the concept of Cauliflower Fried Rice, but I was very intrigued to see what all the fuss was about. But alas, when I asked what he thought of the Cauliflower Fried Rice recipe his response (in between shoveling it into his mouth) was, “I love it!” I’m excited to make this Cauliflower Fried Rice recipe more often because it’s one of those versatile dishes where you can pretty much just use whatever ingredients sound good to you/or whatever you have on hand. I will recommend to not skip the green onions or coconut aminos (if you’re not Paleo/Whole30 just use soy sauce). Not familiar with Coconut Aminos? Neither was I! Mango Avocado Salad or Dip

MangoavosaladMake this now; thank me later. Seriously, this is to die for. I could eat it every day. I adapted this recipe from my coworker’s “Cowboy Caviar Chip Dip” and I’m forever thankful to her for bringing it into my life! The adaptations were: I used mango and/or strawberries instead of corn and/or black eyed peas, reduced the amount of oil and added lime juice. This is a slap-your-grandma damn good salad. Or if you dice the ingredients smaller it makes for a dip that’s the best thing that’s happened since studies claimed red wine in moderation is good for you. I’ve made this recipe five times in two weeks, I simply can’t get enough and I bet you won’t be able to either! Honey Apple Challah

honeyapplechallahHolla at ya girl I finally made Challah! I followed this recipe precisely from Tori Avey — I didn’t make substitutions or changes, so this post is more of a review rather than a recipe post. To confess, the only Challah I’ve had is from my favorite bakery Great Harvest, so I don’t have much to compare it to. However, even with the addition of apples and honey in this homemade recipe I still prefer Great Harvest’s version. The Honey Apple Challah recipe has a bit of a sourdough-y taste to it whereas Great Harvest’s is much sweeter. Don’t get me wrong, the Honey Apple Challah was quite delicious, especially when toasted! I didn’t love it as is though like I loved Great Harvest’s version plain. So, my hunt for the tastiest Challah recipe continues! Nonetheless these looked beautiful and my coworkers LOVED them, so maybe I’m just being too picky ;)

Chai Me! Pumpkin Spice Chai Latte Mix

chaiI’m a big fan of Big Train Vanilla Chai latte mix. And per usual, if I really like something that is store bought I’ll have a go at making a homemade version of it. This homemade vanilla chai tea powder recipe is absolutely divine and my husband loves it too. I make it using hot water as the base and top it off with almond milk. Since fall is upon us I couldn’t resist adding some pumpkin pie spice to the chai tea latte recipe, but that’s just my personal preference. ‘Tis the season :) Read more of this post

The Best Sautéed Kale – Oil Free!

Ingredients and directions:

Kale is an ultra healthy superfood that is the perfect addition to any SIP Meal (SIP = S*** In a Pan). I just made some sautéed kale last night and mmm! mmm! it was delicious! For two side dish servings: Crumble/dissolve 1/2 a chicken flavored bouillon cube into 1/2 cup warm water. Pour into a large skillet on medium heat and add 5 oz kale (I 1/2 package Trader Joe’s Organics Lacinato Kale). Stir and cover, let it cook for 2-3 minutes or so. Add any additional seasonings to your taste, like freshly ground black pepper. Enjoy as a side or mixed into your favorite dish. We enjoyed ours with sautéed mushrooms and a grilled veggie burger, as seen in this post.

Spiced Butternut Squash and Lentil Soup (Vegan, GF)

This soup is so jam packed with flavor! I only wish I had made more so I could freeze it and eat it whenever I want! This popular recipe comes from BHG Biggest Book of Slow Cooker Recipes. I only made a few adaptions according to what ingredients I had on hand.
