Honey Apple Challah

honeyapplechallahHolla at ya girl I finally made Challah! I followed this recipe precisely from Tori Avey — I didn’t make substitutions or changes, so this post is more of a review rather than a recipe post. To confess, the only Challah I’ve had is from my favorite bakery Great Harvest, so I don’t have much to compare it to. However, even with the addition of apples and honey in this homemade recipe I still prefer Great Harvest’s version. The Honey Apple Challah recipe has a bit of a sourdough-y taste to it whereas Great Harvest’s is much sweeter. Don’t get me wrong, the Honey Apple Challah was quite delicious, especially when toasted! I didn’t love it as is though like I loved Great Harvest’s version plain. So, my hunt for the tastiest Challah recipe continues! Nonetheless these looked beautiful and my coworkers LOVED them, so maybe I’m just being too picky ;)

Pumpkin Mini Muffins & Bars – all natural, gluten free, sugar free, vegan.

pumpkinbarsmuffinsAnother pumpkin recipe! Sick of ’em yet? :) I aspired to make some raw vegan pumpkin bars, for which the pumpkin filling part of it was PERFECT! But unfortunately the base that I made for a crust was way too overpowered by the taste of molasses (who knew that just two tablespoons of molasses can totally overpower a recipe?!) It was way too strong to eat, so since I no longer had a base for my pumpkin filling I decided to switch gears. To the raw vegan pumpkin filling I added 2 flax “eggs”, applesauce, gluten free flour, coconut & safflower oils, salt, and baking powder. Now I had a perfect batter for a homemade vegan pumpkin mini muffin recipe or also a homemade vegan pumpkin bars recipe.

Pumpkin Cranberry Walnut Gluten Free Granola Bars

granolabarscutThat Sweet Cranberry Pecan granola recipe was sooo tasty I had to make it again. But this time I adjusted the ingredients to reflect that of the season…pumpkin with walnut! It’s very similar to my homemade gluten free Sweet Cranberry Pecan granola, clusters, or bars recipe, but I with just a few additions (pumpkin and more spices) and adjustments (1/2 cup more oats, walnuts instead of pecans, 1/4 cup more cranberries, 2 TBsp more oil).

Chewy Coconut Cookies – (GF, Dairy Free, Refined sugar free)

coconutcookiesAnd yes, they taste (so) GOOD!! :) I will never post a recipe that wasn’t well-received, unless it’s to do a recipe review of something I made. So before you assume that there is no way a gluten free dairy free refined sugar free cookie can taste good, let me tell you the reactions people at my office had when they tried this cookie. Many of my coworkers live gluten free or dairy free lifestyles and one co-worker happened to be on a “no-sugar-september” kick. I challenged myself to make something that was suitable for everyone, but I didn’t tell people these homemade cookies were gluten free, dairy free, refined sugar free cookies. I just told everyone they were Coconut Cookies and observed their reactions. Everyone loved them and most came back for seconds or thirds. When I told people they were gluten free dairy free refined sugar free cookies they proceeded to pick up their jaws off the ground. So there you have it! S’more Cookies

smorecoookieNo campfire? No problem. Enjoy s’mores year round with this SMORE COOKIES recipe! Baked on top of graham crackers, these marshmallow-filled cookies are then topped with pieces of hershey’s chocolate bars. I love the crunch of the graham cracker combined with the soft gooey pillowy marshmallow cookie. I also spread peanut butter on half of the graham crackers before adding the cookie dough which was a good move in my humble opinion. If I had nutella on hand I would have experimented with that as well. Now for the Smores graham cracker cookie recipe!

An Eclair Affair

If you know me, you probably know that my mom is famous for her decadent cheesecakes! I always thought it would be fun to have a signature dessert like my mom. However, I hadn’t made anything yet that seemed..right for the part. Until now. ECLAIRS! I made eclairs for the first time this week and oh man, they were yummmmmmMY! Then I thought, “Emma’s Eclairs” has a nice ring to it…maybe this will become my “signature dessert.” I’m very excited to share this first draft of the recipe, and I’m excited to make it often and play around with the ingredients. Maybe one day I will be known for my eclairs like my mom is known for her cheesecake :)

Bread Pudding

This was my first time making bread pudding and it turned out wonderfully! I brought it to my office and everybody loved it. They were very surprised to find out that it was made with (mostly) almond milk. That being said, I can only imagine how sinful it would taste if you make it with whole milk or cream!
