Roasted Winter Hash

It’s been a while! So, what delicious recipe inspired me to update the blog? A super simple, super yummy roasted winter medley. And of course, it was very popular with my husband, which is also a good indicator to put it on the blog :)

    Serves 2.


1 Apple, chopped
1 Pear, chopped
1 Sweet Potato, chopped
1 Delicata Squash, peeled & chopped (a small butternut squash would work too).

Olive oil
Juice of 1/2 a small orange
Salt, pepper, cinnamon, dried rosemary


Preheat oven to 375F. Spray 9×13 baking dish with non-stick spray or coat w/olive oil. Add the chopped apple, pear, sweet potato, and squash to the baking dish. Drizzle olive oil and juice of 1/2 small orange over the medley and stir to coat. Sprinkle one layer of salt, pepper, cinnamon, and dried rosemary over the top of the hash and stir to combine. Bake for 30 minutes, stirring once halfway through.
