Nicoise Tuna Salad – Whole30/Paleo

Nicoise Tuna SaladSalads are da bomb. I love making salads for lunch and/or dinner because the possibilities for flavor combos are endless! Here is what I threw together to make a Whole30 approved/Paleo Nicoise Tuna Salad. This could easily be made vegan by replacing the egg and tuna with your favorite vegan alternatives, or by just omitting them completely.

Ingredients and directions:

On top of a bed of your favorite greens tossed with your favorite dressing add 1 sliced hard boiled egg, a handful of cooked (& cooled) green beans, 1/4 of a large diced avocado, 1/4 of a cooked & diced sweet potato, handful of cherry tomatoes cut in half and 1/4 cup tuna (optional: mix with a bit of homemade whole30 mayo if you’re into that!). Sprinkle your favorite seasonings over the top (I used celtic sea salt, paprika, garlic powder, and just on the eggs I sprinkled celery salt). If you want to make it look super dynamite for a photo (like I did, obviously ;) ) or whomever you’re serving it to then make sure to group each ingredient together as seen in the photo I took of mine.
