Crispy Chicken Tenders – Paleo

Paleo Crispy Chicken TendersYou’ve got to try these Whole 30/Paleo friendly crispy “breaded” chicken strips! I just made them last night when we had company over and they were received with great approval :)

    Makes 4 servings


1 lb Organic Natural Chicken Tenders

3/4 cup cashews + 2 Tablespoons pine nuts, ground up until crumbly (use a food processor or blender)

1/4 cup flaxseed meal (ground flaxseed)

1 tsp chia seeds

1 tsp salt + 1/2 tsp each: pepper, cumin, chili powder, garlic powder.

2 eggs, whisked in a shallow flat dish with 1 Tbsp coconut aminos (paleo-friendly soy sauce) or soy sauce (not paleo).


Mix the dry ingredients well and pour onto a plate. Dip chicken tenders in egg mixture then coat thoroughly in “breading” mixture and set aside on a plate. Once they’re all coated cook in a frying pan coated with olive oil on medium heat until golden, turning once halfway through cooking (~3-4mins) taking care not to remove breading. Continue to cook a few more minutes until no more pink is inside.

Serve with roasted veggies (pictured is roasted zucchini) and salad – try this addicting Mango Avocado Salad. Yum!
