Mango Avocado Salad or Dip

MangoavosaladMake this now; thank me later. Seriously, this is to die for. I could eat it every day. I adapted this recipe from my coworker’s “Cowboy Caviar Chip Dip” and I’m forever thankful to her for bringing it into my life! The adaptations were: I used mango and/or strawberries instead of corn and/or black eyed peas, reduced the amount of oil and added lime juice. This is a slap-your-grandma damn good salad. Or if you dice the ingredients smaller it makes for a dip that’s the best thing that’s happened since studies claimed red wine in moderation is good for you. I’ve made this recipe five times in two weeks, I simply can’t get enough and I bet you won’t be able to either! Eat it plain, with mixed greens, or use it to make loaded yams, sweet potatoes, butternut squash, etc!

    Makes approx 4 cups

Ingredients and Directions

  1. Coarsely chop 1 large of each: mango, avocado, tomato. (*When strawberries are in season use a cup of those instead of tomato!)
  2. Chop 2/3 cup each: cilantro (including stems) and green onions.
  3. In a medium bowl combine the above ingredients. Optional to add one 15oz can of or your favorite type of bean, black is delicious!
  4. In a separate small bowl briskly stir together 2 Tbsp each: olive oil, red wine vinegar, and juice from half a lime, plus 2 tsp minced garlic, 1 tsp ground cumin, and 3/4 tsp salt. Pour over the salad and gently toss to evenly coat the ingredients.
  5. Toss with your favorite type of salad greens for an outrageous salad or use it to make loaded yams, sweet potatoes, butternut squash, etc! Or try serving it with these flavorful Paleo Crispy Chicken Tenders!
  6. Taste and see that the Mango Avocado Salad/Dip/Topping/whatever you want to call it is good.
