Pumpkin Mini Muffins & Bars – all natural, gluten free, sugar free, vegan.

pumpkinbarsmuffinsAnother pumpkin recipe! Sick of ’em yet? :) I aspired to make some raw vegan pumpkin bars, for which the pumpkin filling part of it was PERFECT! But unfortunately the base that I made for a crust was way too overpowered by the taste of molasses (who knew that just two tablespoons of molasses can totally overpower a recipe?!) It was way too strong to eat, so since I no longer had a base for my pumpkin filling I decided to switch gears. To the raw vegan pumpkin filling I added 2 flax “eggs”, applesauce, gluten free flour, coconut & safflower oils, salt, and baking powder. Now I had a perfect batter for a homemade vegan pumpkin mini muffin recipe or also a homemade vegan pumpkin bars recipe.

Chai Me! Pumpkin Spice Chai Latte Mix

chaiI’m a big fan of Big Train Vanilla Chai latte mix. And per usual, if I really like something that is store bought I’ll have a go at making a homemade version of it. This homemade vanilla chai tea powder recipe is absolutely divine and my husband loves it too. I make it using hot water as the base and top it off with almond milk. Carrot Ginger Soup w/Multigrain Blend & Veggies

carrotgingersoupcookedI love shopping at Trader Joe’s, especially when their samples are right on the money because they’re generally SO incredibly easy to throw together. Last time I went to Trader Joe’s they were sampling their Carrot Ginger Soup combined with their Multigrain Blend with Vegetables. Sold. I just threw this together at home today and added two organic sweet potatoes to the mix; it was the perfect cup of soup on this beautiful fall day. The soup is gluten free and vegan (besides the honey) and the multigrain blend is vegan/vegetarian, but not gluten free. You could easily make a homemade version of this in the crock pot! My husbands satisfying quote after scarfing it down, “Mmmm. *Pause* That was really good.”

Pumpkin Cranberry Walnut Gluten Free Granola Bars

granolabarscutThat Sweet Cranberry Pecan granola recipe was sooo tasty I had to make it again. But this time I adjusted the ingredients to reflect that of the season…pumpkin with walnut! It’s very similar to my homemade gluten free Sweet Cranberry Pecan granola, clusters, or bars recipe, but I with just a few additions (pumpkin and more spices) and adjustments (1/2 cup more oats, walnuts instead of pecans, 1/4 cup more cranberries, 2 TBsp more oil).

Puppy Chow! No really, homemade dog food recipe


All dogs are different (obviously…) and may tolerate certain foods differently. This recipe I made for my chihuahua mix is based off of the recommendations found on this site for homemade food recipes for adult chihuahuas:

60% of protein from lean turkey, lean beef, chicken, a little chicken fat is good, fish (mackerel or herring but no more than twice a week) organ meats, lamb, eggs in moderation,

40% vegetables carrots, green beans, broccoli, peas, spinach, pumpkin, celery, cauliflower, cucumbers (broccoli and cauliflower may cause gas) Pumpkin is excellent for diarrhea and soothing the tummy.

10% carbohydrates white rice, brown rice, potatoes  (must be cooked), oatmeal.

I give my dog half the daily recommended portion because she still eats half of her regular dry food. Read more of this post

Homemade Honey Pecan Butter

pecanbutterNothing fancy here! Just combine on full speed in a food processor: 2 cups raw pecans, 3 Tbsp honey, and 20 vanilla sweet drops (optional) until it turns into pecan butter! This homemade pecan butter is delicious on toast, pancakes, waffles, or as a dip for sliced apples. I also used it in my chewy coconut cookies recipe.

Chewy Coconut Cookies – (GF, Dairy Free, Refined sugar free)

coconutcookiesAnd yes, they taste (so) GOOD!! :) I will never post a recipe that wasn’t well-received, unless it’s to do a recipe review of something I made. So before you assume that there is no way a gluten free dairy free refined sugar free cookie can taste good, let me tell you the reactions people at my office had when they tried this cookie. Many of my coworkers live gluten free or dairy free lifestyles and one co-worker happened to be on a “no-sugar-september” kick. I challenged myself to make something that was suitable for everyone, but I didn’t tell people these homemade cookies were gluten free, dairy free, refined sugar free cookies. I just told everyone they were Coconut Cookies and observed their reactions. Everyone loved them and most came back for seconds or thirds. When I told people they were gluten free dairy free refined sugar free cookies they proceeded to pick up their jaws off the ground. So there you have it!
