Sweet Cranberry Pecan Granola, Clusters, or Bars

IMG_2105.JPG Last week I tried some granola that was simply amazing. The brand is Love Grown Foods, flavor was called Sweet Cranberry Pecan. It also happened to be gluten free, which is a plus for all those gluten free people out there. My mission? Recreate that goodness! I used my Maple Pecan Granola recipe for proportion’s sake and just substituted the ingredients for those found in Love Grown Foods Sweet Cranberry Pecan granola clusters. I did add some hemp hearts because I had them on hand and wanted to use them. I also used pumpkin seeds instead of sunflower seeds… just because :) The final result? My husband thought it was more of that amazing store bought granola! I will definitely be making this Sweet Cranberry Pecan granola clusters recipe often. It’s the best homemade granola recipe I’ve tried, IMHO.

    Makes 9 cups

Dry Ingredients
3.5 cups gluten free oats
1.5 cups raw pecan halves, broken in half
1 cup unsweetened coconut flakes
1 cup sweetened dried cranberries
1/2 cup raw pumpkin seeds
1/4 cup flaxseed meal
1/4 cup hemp hearts
1.5 tsp cinnamon
1.5 tsp freshly ground sea salt

Liquid ingredients
3/4 cup organic brown rice syrup
1/3 cup honey
2 Tbsp safflower oil
1.5 tsp vanilla extract
1 tsp butter extract (optional but if you like healthy baking I highly recommend picking some up–a great way to add some butter flavor when not using butter!)

Directions
Preheat oven to 350 degrees F and line a rimmed cookie sheet with a silpat or parchment paper. In a large bowl mix together well the dry ingredients. Mix the liquid ingredients in a separate bowl. Pour liquid mixture into dry mixture and stir until coated evenly.

For clusters or bars:
Press mixture firmly & evenly onto sheet. For bars, bake 15-20 mins depending on how chewy/crispy you like it, then remove and cool. For clusters, bake 20 mins then flip the batch over by breaking into very large portions. Bake an additional 5 mins, cool, and break into clusters. Store in an air tight container.

For granola:
Spread mixture onto sheet and bake for 10 mins. Stir mixture around then bake for another 10. Cool and store in an air tight container.
