Kale-wrapped Veggie Burgers


Lose the buns! These kale wrapped tofu veggie burgers were so good I made them twice in a row for dinner. Even though that meant going to Trader Joe’s two evenings in a row to pick up another 2-pack of the tofu burgers….so worth the scrumptious deliciousness in my belly.






    Makes 2 Burgers:

  • Olive oil cooking spray & olive oil
  • 2 Trader joe’s organic tofu veggie burgers
  • 2 sliced rounds of sweet onion
  • 5 crimini mushrooms, sliced thinly
  • A little apple cider vinegar
  • 2 tablespoons Trader Joe’s organic ketchup
  • Various seasonings to taste: freshly ground pepper, Mrs. Dash Salt Free “chicken” and “garlic and herb” seasoning, and chili powder.
  • 1 large tomato, sliced into circles
  • 1 small avocado, sliced into ovals
  • 4 lacinato kale leaves, stems sliced flush to leaf
  • 2 toothpicks

Try to keep the thickness of the veggies sliced evenly, and try to keep the onion rings to remain sitting inside each each other so it stack evenly on top of the burger.

1. Heat large nonstick skillet sprayed with olive oil to medium heat. While heating, slice the onions and mushrooms.
2. Put veggie burgers, onions, and mushrooms on skillet. Drizzle a little olive oil over the vegetables and generously sprinkle on seasonings. Cook 5 mins…meanwhile:
3. Prepare/slice tomato, avocado, and kale leaves. The kale has a stem that it thin at the top and gradually thickens toward the bottom. Carefully slice the stem from top to bottom so that it’s very thin, making it flexible to wrap around the burger (see photo below).
4. Flip the veggie burgers once and stir veggies. Add a little apple cider vinegar over the veggies and spread ketchup on each cooked side of burger. Let cook 3-4 mins.

Place burger on widest part of kale. Top with an EVENLY FLAT layer of: avocado, onion, tomato, then shrooms. Wrap kale around and hold in place with toothpick if needed. Wrap a second kale leaf around the other side, removing the toothpick and replacing it through both pieces of kale. ENJOY!
