Peanut Butter Cheesecake Bars with Oreo Crust

PB Cheesecake BarsThese bars are hard to handle. Rich. Creamy. Decadent. Chocolatey. Peanut buttery. Oreoy goodness. These are like your classic magic bars on crack. Make them and see for yourself! The best part is that to make the oreo crust, you have get to remove the oreo cream filling from each cookie…and whether the filling ends up in your tummy or in the trash is between you and your kitchen. 

    Makes 24 bars from one 13×9 inch pan


1/2 cup sweet cream butter
1 package original oreos, cream filling removed
1 eight oz package cream cheese, room temp
1 14oz can sweetened condensed milk
3/4 cup creamy peanut butter
2 cups of your favorite topping (I used 1 cup sweetened coconut flakes + 1 cup chocolate chips. Next time I would use all chocolate chips or substitute the coconut for chopped pecans).


Preheat oven to 350F (325 for glass dish)
Put butter in dish and place it in the oven to melt as the oven preheats (check after ~8mins to remove once melted).
While butter is melting, place the oreo cookies (filling removed!) in food processor and process into crumbs. In a separate microwavable medium size bowl combine cream cheese and sweetened condensed milk, microwave for 30 seconds to soften cream cheese. Mix together with a spoon until combined. Soften the peanut butter separately in the same way.

Spray edges of baking dish with cooking spray. Sprinkle oreo crumbs evenly over melted butter. Evenly scrape/pour the cream cheese/condensed milk mixture from the bowl over the crumbs. Repeat with the peanut butter. Sprinkle on the toppings and press down with a spatula (don’t skip this step otherwise the bars won’t stay together properly).

Bake for 25 minutes and allow to cool thoroughly in the fridge before cutting into bars. Store bars covered in the fridge.
