Pizza with Anjou Pear, Dried Figs, Arugula, and Fresh Herbs

pizza I love making homemade pizza. The dough is your canvas and the toppings are your paint! Based on the ingredients I had on hand, this turned out to be what some might call a gourmet pizza. It was mighty tasty! A reminder to myself and anyone out there using a pizza stone: remember to let the stone preheat inside the oven to yield the perfect crispy crust results.

 

    Ingredients/directions:

Makes 1 pizza.
Preheat oven according to pizza dough instructions. We used 1 Trader Joe’s garlic and herb pizza dough, so the preheat temp was 400F. If you have time to make a homemade dough, I recommend Bobby Flay’s recipe which is delicious! After rolling out the dough, spread pizza sauce all over. Again, if you have time to make homemade sauce, do it! Microwave for 15 seconds (or until melted) 6 oz mascarpone cheese and spread it in with the red sauce. Layer a generous handful or two of mozzarella cheese. Then add 2/3 Green Anjou pear (thinly sliced), 1/2 cup chopped baby tomatoes, 1/2 cup chopped dried black mission figs, some fresh oregano leaves, and fresh rosemary sprigs. Bake it for the time according to your dough recipe. Remove from oven, top with fresh arugula, cut and serve!
