Raw Veggie Burrito (Vegan, GF)


So, you want to eat healthy food? Well it doesn’t get much healthier than eating raw veggies! Eating healthy is easier when you trick yourself into thinking you’re eating something awesome like a burrito! Big thanks to FullyRaw.com for all the awesome and creative 100% raw recipes, like this one!

    INGREDIENTS (makes 2 burritos)

Awesomesauce in a blender
– 1/2 zucchini, peeled and roughly chopped
– 1/4 cup sesame seeds
– Juice of 3 lemons
– Few sprigs of green onion
– 1 red bell pepper, membranes and seeds removed
– Spicy red pepper flakes (optional)

– 2 Large collards leaves
– 1-3 bell pepper, chopped and/or sliced for multiple textures
– 1 cucumber, chopped in thin slices
– 1-2 carrots, shredded
– 1 Tomato, sliced or grape tomatoes, halved
– 1 Avocado


Blend all the awesomesauce ingredients in a blender until smooth. Cut the thick part of the collard stem so that it is flush with the leaf (otherwise you will not be able to roll it). See simple video on this here. Spread the sauce all over the back side of the leaf. Place veggies inside the leaf as if it were a taco. Tuck the lengthwise ends toward the center and then roll it up, starting from the bulky side and continuing to tuck the edges of the leaf in so you don’t lose any veggies when you pick it up!
