Big Huge Giant Cookie

20130622-000936.jpgSo you have a cookie craving but no desire (or need) to go through the process of making a whole batch? You’ve come to the right place! Here’s how to make 1 crispy on the outside and gooey on the inside beast of a cookie!

    Ingredients

  • Two tablespoons each: Unsalted butter (softened), sugar (I used stevia), brown sugar
  • 1/2 tablespoon flaxseed meal mixed with 1.5 tablespoons water, let sit for at least 2 mins
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons peanut butter (if using a natural kind make sure it’s no-stir)
  • 2 tablespoons all purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 tablespoons rolled oats
  • 1/2 cup mix-ins (I used 1/4 cup raisins + 1/4 cup chocolate chips)

Directions

Preheat oven to 350F degrees. Spray baking sheet with nonstick spray or line with a silpat.

In a large cereal bowl, vigorously mix together the butter and sugars with a fork until light and fluffy. Add flaxseed mixture and vanilla, mixing until well combined. Stir in peanut butter followed by flour, cinnamon, baking soda and salt. Fold in oats and mix-ins of choice until combined. With a rubber spatula, scrape/form the dough into one “corner” of the bowl. Plop it down on prepared baking sheet and form it so it looks similar to the photo below.

Bake for 16-18 minutes, until edges are lightly browned. The center may seem undone, but it will set more as the cookie cools. Plus, I fancy a gooey center of a cookie. Let cool ON the baking sheet for 10 minutes.
