Adobo Chicken Burritos

burritoThe following is my adapted version of this recipe. The original recipe called for using a blender, multiple pans, and a food processor. I didn’t feel like dirtying/washing so many dishes/electrics, so I modified it so that it requires just 1 large skillet. Also, next time I would add rice to the mix :)

    Ingredients

  • 6 chicken tenderloins
  • 1 tablespoon olive or vegetable oil
  • 1 medium onion, diced
  • 1 tsp minced garlic
  • 1/2 tsp brown sugar
  • 2 tsp adobo seasoning
  • 2 tsp each ketchup & bbq sauce
  • 1 cup canned diced tomatoes with their juice
  • kosher salt and ground pepper (to taste)
  • 3 tbsp chopped green chiles, drained
  • 15oz can black beans, drained
  • 12 inch flour tortillas, warmed
  • sour cream (I used plain greek yogurt) to taste
  • cheese (to taste). I used 1 Tbsp Cotija cheese per burrito
  • 1 cup shredded lettuce
  • 1/2 cup pico de gallo salsa
  • 1 avocado, peeled and cut lengthwise into 1/3 inch thick slices

Directions

  1. In a large skillet, combine the chicken tenderloins, quartered onion, & garlic. Add enough water to cover the chicken and bring to a simmer. Cover and cook over moderately med-low heat until the chicken is done (7 mins each side). Remove the chicken and shred it into bite-size pieces. Transfer the chicken to a medium bowl.
  2. Add the oil to the skillet along with the diced onion and brown sugar and cook over moderately high heat until the onion is golden brown, 10 minutes. Add the adobo, ketchup/bbq, tomatoes, green chiles, and salt/pepper to taste; and simmer over moderately low heat until thickened, 10 minutes. Heat beans in microwave until hot.
  3. To assemble tortillas, put everyone you just made along with the desired amount of remaining ingredients somewhere inside the tortilla, roll it up, and eat it! It’s not rocket science, it’s a burrito :) I do like to mist a skillet with cooking spray and place the rolled up burrito on it for 1 minute or so on each side to make it a little crispy (like in the photo).
