Cupcakes are great! But I wouldn’t say they’re “company-worthy.” I was having guests over for dessert on short notice and didn’t have time to make a trip to the store. I found some chocolate cake mix and thought “I’ll just make cupcakes.” But that just wouldn’t meet the bar! I also had some chocolate pudding mix in my pantry and got creative. Now I’ve discovered the potential of a cupcake. Add a layer of pudding and a hidden mini peanut butter cup . . . delectable. It’s like a simplified molten chocolate cake.

    Ingredients

  • 1 box chocolate cake mix (I used Bob’s Red Mill gluten free chocolate cake mix)
  • Other ingredients needed for above mix
  • 1 box instant pudding + other ingredients listed on box (I used Jell-o Temptations, Chocolate Truffle Indulgence flavor)
  • 18 Mini Reese’s Peanut Butter Cups, or mini candy of your preference

Note: These were so good I’m going to experiment with other favorite flavors of cake and pudding mix that compliment each other. My cake mix was 16oz dry which made 18 cupcakes.

Directions

          1. Preheat oven to 350F and line muffin tin with cupcake liners. Lightly spray liners with baking spray.
          2. Prepare the pudding mix as directed in medium bowl (enough to make 2 cups total), place in fridge. You could also buy pre-made pudding.
          3. Prepare the cake mix as directed and fill each cupcake liner 1/3 full, then set 1 mini PB cup in the middle of each.
          4. Layer a spoonful of pudding in the middle of each cupcake and spoon remaining cake filling on top. Be sure to carefully spread the cake mix so it completely covers the pudding and does not swirl together.
          5. Bake in preheated oven for 15-18 minutes. Let cool a few minutes before serving.
            Note: If you use the Jell-o Temptations pudding mix, it comes with a chocolate topping that I drizzled over the tops before serving (be sure to remove the cupcakes from their liners if you do this).

As you can see, I also put chewy caramels in the middle of some, but the PB cups were way better.
