Healthy Homemade Low-fat Yogurt

20130626-114542.jpg If you don’t buy organic yogurt (or organic anything), then I think ignorance is bliss when it comes to the ingredients. I checked the ingredients in a Yoplait strawberry light yogurt and found: cornstarch, added sugar, citric acid, aspartame, Red #40 (which is made from petroleum), etc. Sorry to spoil your bliss! But the good news is you can buy organic yogurt if you don’t like to eat petroleum. Or you can make your own organic yogurt with just two ingredients! It is oh so delicious with a sprinkle of cinnamon and topped with fruit or granola.

Maple Pecan Granola!

20130625-164600.jpgI made my first batch of granola last week and it’s already gone! I couldn’t wait to experiment with different ingredients & flavors, so I was excited to make a new batch. This granola has pecans, almonds, chia/flax seeds, dried raisins & apricots, and a blend of high fiber/protein mixes. Cashew “Alfredo” Pasta Sauce

veggie noodles I loooove cashews! So when I stumbled upon this recipe for cashew cheese (vegan-friendly), it immediately grabbed my attention. A commenter suggested making it into a pasta sauce. Even better! By the way, I put this sauce over sauteed zucchini/yellow squash “noodles,” mushrooms, and kale. Chocolate Cup-pudding-cake


Cupcakes are great! But I wouldn’t say they’re “company-worthy.” I was having guests over for dessert on short notice and didn’t have time to make a trip to the store. I found some chocolate cake mix and thought “I’ll just make cupcakes.” But that just wouldn’t meet the bar! I also had some chocolate pudding mix in my pantry and got creative. Now I’ve discovered the potential of a cupcake. Add a layer of pudding and a hidden mini peanut butter cup . . . delectable. It’s like a simplified molten chocolate cake. Read more of this post
