10 Grain Muffins

ImageThese are my favorite muffins! The best part is the recipe makes delicious 10 grain muffins, but I love to add whatever ingredients I have on hand to spruce them up… like blueberries and almonds (as pictured).


  • 1 cup Bob’s Red Mill 10 Grain Hot Cereal
  • 1-1/4 cups almond, coconut, or regular milk
  • 1/2 cup sugar
  • 1 egg
  • 1/3 cup butter OR applesauce..oh yeah
  • 1 cup flour (or blend enough uncooked rolled oats in a blender to make 1 cup)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp Salt
  • Get creative with these muffins! Try adding 1 tsp vanilla or almond extract. Perhaps 1 tsp cinnamon and diced apples. Fresh fruit, dried fruit, shredded coconut…whatever combos sound good to you!


    Mix 10 Grain Cereal and milk; allow to stand for 10 minutes while preheating oven to 400°F and assembling other ingredients; cream sugar, margarine or applesauce, and egg together. Add the dry ingredients and milk mixture. Stir only until mixed. Spoon into greased muffin pan. Bake for 15 minutes.

    Makes 12 muffins.
